Volnay

This wine is distinguished by its subtle aromas of red fruits, such as cherry and raspberry, complemented by floral nuances and gentle spices. On the palate, it offers fine, silky tannins, pleasant freshness, and the finesse characteristic of Volnay wines, making it an ideal choice for early tasting while possessing interesting ageing potential.

Vinification & Ageing

The grapes are 100% destemmed. Once in the tank, we perform a cold maceration for 5 to 6 days. This allows us to carry out punching down and pumping over together to extract the characteristics of the terroir. Alcoholic fermentation takes place in concrete tanks, while malolactic fermentation occurs in barrels.

This cuvée represents approximately 7 barrels, 20% of which are aged in new oak barrels sourced from French forests. The remainder is aged in barrels used for one or two previous vintages. Fine lees are retained during ageing to bring additional roundness and depth to the wine. After 12 months in barrels, the 7 barrels are racked and blended in stainless steel tanks, where they spend an additional 6 months before bottling.

Ageing potential: 5 to 10 years – Serving temperature: 14°C to 16°C
Can be paired with: roast poultry, tagine or couscous, veal, or fish with fruity or lightly spiced sauce.
