
Bourgogne Hautes Côtes de Beaune
The Bourgogne Hautes Côtes de Beaune Blanc is characterised by its freshness, aromas of white flowers and white-fleshed fruits, as well as a pleasant minerality. Offering lively energy on the palate, it is perfect for early drinking while also having interesting ageing potential.

After harvest, the grapes are crushed before being pressed. The must is left to settle for 24 hours in a stainless steel tank and is also cooled. Alcoholic fermentation takes place in barrels, as does malolactic fermentation. If necessary, the wine undergoes one or more bâtonnages (stirring of the lees).
This cuvée represents approximately 20 barrels, 20% of which are aged in new oak barrels sourced from French forests. The remainder is aged in barrels used for one or two previous vintages. Fine lees are retained during ageing to add additional roundness and depth to the wine. After 9 months in barrels, the 20 barrels are racked and blended in stainless steel tanks, where they spend an additional 3 months before bottling.
Ageing potential: 5 years – Serving temperature: 10°C to 13°C
Can be paired with: vegetable stir-fry, escargots, delicate fish, seafood, goat cheese, Gruyère, or blue cheese.
