Bourgogne Hautes Côtes de Beaune

This red wine is characterised by fresh aromas of red fruits, such as cherry, raspberry, and redcurrant, accompanied by subtle notes of undergrowth. On the palate, it offers lively acidity, supple tannins, and a balanced structure, making it approachable in its youth while also having interesting ageing potential to develop more complex aromas over time.

Vinification & Ageing

Hand-harvested, the grapes are 100% destemmed. Once in the tank, we perform a cold maceration for 5 to 6 days. This allows us to carry out punching down and pumping over together to extract the characteristics of the terroir. Alcoholic fermentation takes place in concrete tanks, while malolactic fermentation occurs in barrels.

This cuvée represents approximately 15 barrels, 15% of which are aged in new oak barrels sourced from French forests. The remainder is aged in barrels used for one or two previous vintages. Fine lees are retained during ageing to add additional roundness and depth to the wine. After 9 months in barrels, the 15 barrels are racked and blended in stainless steel tanks, where they spend an additional 3 months before bottling.

Ageing potential: 5 years – Serving temperature: 15°C to 18°C
Can be paired with: balanced, non-spicy dishes such as pork, veal, lamb, vegetables, and mild-flavoured cheeses.
