Bourgogne Côte d’Or

This red wine is characterised by its aromas of fresh red fruits, such as cherry and raspberry, along with subtle notes of spices and undergrowth. On the palate, it offers delightful freshness, supple tannins, and great ageing potential, allowing more complex aromas to develop over time.

Vinification & Ageing

Hand-harvested, the grapes are 100% destemmed. Once in the tank, we perform a cold maceration for 5 to 6 days. This allows us to carry out punching down and pumping over together to extract the characteristics of the terroir. Alcoholic fermentation takes place in concrete tanks, while malolactic fermentation occurs in barrels.

This cuvée represents approximately 25 barrels, 15% of which are aged in new oak barrels sourced from French forests. The remainder is aged in barrels used for one or two previous vintages. Fine lees are retained during ageing to bring additional roundness and depth to the wine. After 9 months in barrels, the 25 barrels are racked and blended in stainless steel tanks, where they spend an additional 3 months before bottling.
