Bourgogne Côte d’Or

This white wine is distinguished by its aromas of white-fleshed fruits, flowers, and subtle mineral notes. It combines freshness, finesse, and roundness, offering a perfect balance between elegance and complexity, with notable ageing potential.

Vinification & Ageing

After harvest, the grapes are crushed before being pressed. The must is left to settle for 24 hours in a stainless steel tank and is also cooled. Alcoholic fermentation takes place in barrels, as does malolactic fermentation. If necessary, the wine undergoes one or more bâtonnages (stirring of the lees).

This cuvée represents approximately 6 barrels, 20% of which are aged in new oak barrels from French forests. The remainder is aged in barrels used for one or two previous vintages. Fine lees are retained during ageing to add roundness and depth to the wine. After 9 months in barrels, the 6 barrels are racked and blended in stainless steel tanks, where they spend an additional 3 months before bottling.

Ageing potential: 5 years – Serving: 12°C to 14°C
