After harvest, the grapes are crushed before being pressed. The must is left to settle for 24 hours in a stainless steel tank and is also cooled. Alcoholic fermentation takes place in barrels, as does malolactic fermentation. If necessary, the wine undergoes one or more bâtonnages (stirring of the lees).
This cuvée represents approximately 2 barrels, 50% of which are aged in new oak barrels sourced from French forests. The other barrel is aged in a one-year-old barrel. Fine lees are retained during ageing to add additional roundness and depth to the wine. After 9 months in barrels, the 2 barrels are racked and blended in stainless steel tanks, where they spend an additional 3 months before bottling.
Ageing potential: 5 to 10 years – Serving temperature: 12°C to 14°C
